Byebrook Farm is an eighth generation family dairy in Bloomville, in Delaware County, run by Paul and Gwen Deysenroth. Their cows are grass-fed with intensive grazing and no added hormones, and the family turns part of the milk into Gouda in flavors like cumin, dill, and smoked.
Raw milk is sold from a self serve stand at the farm. New York allows raw milk to be sold only on the farm where it’s produced, and only by farms holding a state raw milk permit. Permitted farms are inspected and have their milk sampled and tested by the state, and they post a sign letting customers know the milk is unpasteurized.
Our tip: Try the raw milk Gouda. It’s aged at least 60 days and pairs perfectly with a glass of their milk.
